CN Central Definitions

  • Actual Portion Size: Amount that you will actually serve of an item

  • Creditable Portion Size: Amount of item that is actually creditable towards the menu pattern

  • Component: May include Fruits, Vegetables, Whole Grain—Rich Grains, Meat/Meat Alternates, or Milk

  • Meat/Meat Alternate- Extra: Breakfast Only, Meat/Meat
    Alternate item added to the menu as an additional item, does not count towards any of the components

  • Meat/Meat Alternate- Grain: Breakfast Only, Meat/Meat Alternate counted as a Grain Component

  • Operating Day: Day meals are served

  • Recipe: Side item with more than one creditable component

  • Recipe– Entrée: Entrée Item with more than one creditable component

  • Total Feeding Figure: Total amount of reimbursable student meals planned on each day
